Roasted Nuts
Roasted nuts are some of the most nutritious snacks you can think of. They are high in unsaturated fats and other important bioactive compounds. They are considered a valuable source of plant proteins, contain high amounts of fiber, and have many benefits to our health.

One study found that Vitamin E content and antioxidant levels decreased significantly after using high temperature during roasting. It has also been found that a chemical called “Acrylamide” formed when some nuts were roasted at high temperature. This chemical may increase the risk of cancer in humans. It is also responsible for the off tastes and “after” smell that comes when roasting some nuts.
Roasting nuts at low to medium temperature is the best and safest way to cook nuts, and has the least effects on their flavor and composition.
