Pearled Couscous Salad

Pearl couscous is made from wheat flour, and is cooked by boiling it in water. Unlike marocan couscous which is made out of durum wheat and is cooked by steaming it.

1 servings (1/2 cup cooked) provides 6 g of proteins, 4 g of fiber, 30 g of carbs, as well as an array of vitamins and minerals.

Ingredients

1 package garlic couscous

1 cup chickpeas

1 cup chopped cucumbers

1 cup tomatoes

1 lime

1 tbsp olive oil

1/2 tsp dry mint

salt & pepper to taste

Steps

  1. Cook couscous according to the box, you only need half of the package content for this recipe so you can save the rest.

  2. Wash and chop tomatoes & cucumbers

  3. wash and drain chickpeas

  4. mix all ingredients along with dressing

  5. serve cold
