Apple Chicken Salad

This is by far one of my favorite salads to make! It’s easy, nutritious, full of fiber and under 400 calories per serving! I layered it with blue cheese and a chia seed maple dressing for a taste of tanginess, and walnuts for added crunch.

Ingredients

1 apple chopped into bite size cubes

2 oz. crumbled blue cheese

2 tbsp crushed walnuts

fresh greens (iceberg lettuce mix, or baby greens)

6 oz. grilled chicken breasts

Dressing Ingredients:

1 tbsp chia seeds

1 tbsp organic maple syrup

1 tbsp olive oil

1 tbsp lime juice

salt and pepper to taste

Steps

  1. layer salad ingredients starting with fresh greens

  2. mix dressing ingredients and toss to coat evenly
