Beets Blue Cheese Salad

The combination of the earthy taste of beets along with the umami taste of blue cheese is absolutely delicious! Top it off with some walnuts for added crunch and nutritional value.

Ingredients

1 can beets

2 oz. blue cheese

3 cups lettuce

2 cups spinach

2 tbsp walnuts

For the dressing:

1 lime juice

1 tbsp pomegranate molasses

1 tbsp olive oil

1 tbsp honey dejoun mustard

salt & pepper to taste

Steps

  1. whisk ingredients of dressing all together until well combined

  2. Wash and drain beets

  3. mix ingredients together

  4. sprinkle blue cheese on top
