Kidney Bean Salad

Kidney beans are a part of the nutritious legumes family. One serving, which is about 1/2 a cup is an excellent source of iron, magnesium, and vitamin B-6. It has been found that When consuming legumes as a part of a healthy diet, they play a role in prevention of many health conditions.
This recipe is a simple and easy way to consume more legumes in your diet.

Ingredients

1 cup kidney beans (canned)

1 cup sweet corn (canned)

1 cup tomatoes

1 cup cucumbers

1 cup carrots

2 cups iceberg and lettuce mix

for dressing:
1 lemon juice

1 tbsp olive oil

1 tbsp pomegranate molasses

Salt & pepper to taste

Steps

  1. Wash and drain canned products

  2. wash all vegetables and chop them

  3. mix dressing ingredients with a whisk

  4. toss all ingredients and coat with dressing
