Healthy Burrito Bowl

This burrito bowl recipe is not only easy to put together, but it’s less in carbohydrates than a regular burrito wrap! It’s also high in fiber and delicious!

Ingredients

2/3 cups cooked brown rice

1/4 cup black beans

1/4 cup corn

1/2 cup bell peppers

3 oz. cooked grilled chicken breasts

2 tbsp salsa

2 tbsp fat free Greek yogurt

2 tbsp shredded cheese

green scallions for garnish

Steps

  1. cook rice according to directions ( I like to use microwaveable rice to make it easy and fast)

  2. Spray a baking sheet with 0 calories non stick spray, lay chicken and bell peppers. Bake for 20 minutes or until internal temperature of chicken has reached 165 F ( I like to use fajita spices when cooking the chicken)

  3. add all ingredients in a bowl, drizzle with salsa and yogurt. Top off with scallions
