Carrot Potato Casserole

This dish is one of my favorites to make! It’s easy, fulfilling, and nutritious! I found it to be useful in hiding many vegetables in one dish for my kids to eat! You can add as many veggies as you desire, but I wanted to stick to basics in this one!

Ingredients

1/2 pound lean ground beef

1 large carrot

1/2 large onion

1 tbsp ginger garlic paste

1 tsp tomato paste

1 cup vegetable broth

3 medium potatoes

3/4 cup frozen sweet peas

1 tbsp vegetable oil

Spices: 1/2 tsp of the following: paprika, salt, pepper, coriander powder, turmeric. 1/4 tsp of cinnamon powder, 1/4 tsp cardamom powder

Steps:

  1. Heat oil in a pan, add onions and sauté till softened, then add ground beef, mix

  2. add ginger garlic paste, spices, tomato paste, mix till semi cooked, turn off heat

  3. Peel potatoes and carrot, slice into round slices

  4. arrange on top of ground beef, add peas. then add enough vegetable broth to cover veggies

  5. cook on medium flame covered until veggies are soften

  6. serve on top of Saffron Rice
