Carrot Bolognese Pasta

This recipe is both fulfilling and delicious . Feel free to use whole grain or gluten free pasta.

Ingredients 

1/2 pound ground beef 

1 cup shredded carrots 

1 cup tomatoes 

1/2 cup onions 

1 tbsp olive oil 

4 garlic cloves 

2 tbsp tomato paste 

6 oz. pasta 

Spices: 1 tsp of: paprika, coriander, Curry 

1/2 tsp pepper and salt to taste 

Steps 

  1. Cook pasta according to the box 

  2. Heat oil in a skillet, sauté onion for 2 minutes, add meat and minced garlic, and cook for 3 minutes, add spices and cook for 4 minutes 

  3. Add tomatoes, carrots & tomato paste, add 1 cup water and simmer on medium till thickens
