Veggie Loaded Pasta

 This recipe is loaded with veggies, as well as high in protein.

ingredients
6 oz baked chicken 

6 oz pasta 

1 cup chopped zucchini 

2 cups chopped asparagus 

1 cup grape tomatoes halved 

1/4 cup onion 

1/4 heavy cream 

2 garlic cloves 

2 tbsp Parmesan cheese 

1 tbsp olive oil 

1/2 cup reserved pasta water 

1 tsp Italian seasoning 

Salt and pepper to taste 

Steps

  1. Cook pasta as direction (reserve 1/2 cup of water) 

  2. Bake chicken with desired spices in the oven 

  3. Wash & Chop all ingredients 

  4. Heat olive oil, add onion, sauté for a minute, add asparagus, sauté for 2 minutes, add zucchini, mix for a minute then add cooked chicken, add pasta & 1/4 reserved water then mix for 1 minute ( add more if needed) 

  5. Add cheese, heavy cream, tomatoes, Italian seasoning, salt and pepper, mix and let it simmer on low for about 3 minutes or till creamy and well combined.
