Creamy Mushroom Spaghetti

To make this dish you will need:

6 oz (dry weight) spaghetti

1/2 cup diced onion

1 zucchini, sliced in halves

2 cups Bella Mushrooms, sliced

1/2 cup grape tomatoes

1/4 cup heavy cream

1/3 cup shredded Parmesan cheese

1 tsp Italian seasoning, more for garnish if needed

2 garlic cloves, minced

1/2 cup low sodium organic chicken stock

1/2 tsp garlic & parsley powder mix

1 tsp light butter + 1 tsp olive

Steps

  1. cook spaghetti according to the box instructions, reserve 1/4 a cup of pasta water

  2. heat butter and olive oil in a deep sauté pan on medium heat

  3. Add onion and sauté till almost softened

  4. add mushrooms and garlic. Sauté till softened (sprinkle some salt & pepper to help cook it faster)

  5. add zucchini and sauté for a minute

  6. add cooked spaghetti, heavy cream, pasta water, stock, Italian seasoning, and Parmesan cheese

  7. mix gently on medium low heat until sauce thickens, sprinkle with garlic & parsley powder
