Easy Veggie & Salmon Dinner

There is nothing better than a fulfilling and a nutritious dinner that is prepared in less than 15 minutes! Best of all is that it’s low in carbs and high in good fats and proteins!
This meal can also be pre-prepped, covered and refrigerated overnight for a better flavor!

Ingredients

16 oz salmon fillet cut into half

2 cups sliced zucchini

2 cups baby carrots or sliced

for the marinade: 2 Tbsp olive oil, 1 tsp minced garlic, 1 tsp salt, 2 tsp Old Bay Spice, 1/2 lime juice, 1/2 cup cilantro leaves

Steps

  1. lay salmon fillets on a baking tray, add vegetables

  2. coat salmon with marinade

  3. sprinkle veggies with pepper and 1 Tbsp olive oil

  4. bake on 360°F for 30 minutes
