Tomato Curry Chicken

This low carbohydrate, tangy and delicious recipe will be one of your new favorites! Using fresh ripened tomatoes is key to making a perfect curry sauce!

Ingredients

1 whole chicken cut into 6 pieces

1 medium onion, chopped

4 diced tomatoes

2 Tbsp minced garlic

2 bay leaves

2 Tbsp almond flour

1 Tbsp sugar

1 cup warm water

2 Tbsp vegetable oil

1 tsp saffron

spices: 1 tsp salt, 1 tsp paprika, 1 tsp turmeric, 1 tsp fenugreek powder, 2 tsp curry powder, 1/2 tsp white pepper

Steps

  1. in heavy non stick sauce pan heat oil then sauté onion until translucent

  2. add a pinch of salt to help soften onions

  3. add chicken, mix, then add spices

  4. mix until chicken is fully coated with spices

  5. add tomatoes, water, bay leaves, and saffron, mix !

  6. Cover and let it simmer on medium heat for about 10 minutes

  7. Uncover, add sugar & almond flour, mix!
    let it simmer until sauce reaches desired consistency

  8. garnish with cilantro
