Tomato Curry Chicken
This low carbohydrate, tangy and delicious recipe will be one of your new favorites! Using fresh ripened tomatoes is key to making a perfect curry sauce!
Ingredients
1 whole chicken cut into 6 pieces
1 medium onion, chopped
4 diced tomatoes
2 Tbsp minced garlic
2 bay leaves
2 Tbsp almond flour
1 Tbsp sugar
1 cup warm water
2 Tbsp vegetable oil
1 tsp saffron
spices: 1 tsp salt, 1 tsp paprika, 1 tsp turmeric, 1 tsp fenugreek powder, 2 tsp curry powder, 1/2 tsp white pepper
Steps
in heavy non stick sauce pan heat oil then sauté onion until translucent
add a pinch of salt to help soften onions
add chicken, mix, then add spices
mix until chicken is fully coated with spices
add tomatoes, water, bay leaves, and saffron, mix !
Cover and let it simmer on medium heat for about 10 minutes
Uncover, add sugar & almond flour, mix!
let it simmer until sauce reaches desired consistencygarnish with cilantro
