Lamb Potato Stew

Nothing is better than using fresh ingredients for your stew! This easy and delicious recipe will sure warm up your winter nights.

Ingredients

6 small potatoes

1 medium onion

1 1/2 cups carrots

4 garlic cloves

1 inch fresh ginger

1/2 lbs lamb meat

4 pitted prunes

1 green scallion for garnish

2 tbsp vegetable oil

2 tbsp tomato paste

1.5 cup vegetable stock (low sodium)

spices:

1 tsp cinnamon powder

1 tsp cardamom powder

2 tsp paprika

1 tsp turmeric powder

1/2 tsp pepper

2 tsp salt

Steps

  1. wash and and chop vegetables

  2. Set a crock pot on simmer, keep lid open and heat oil

  3. add onion and sauté till soft, add meat

  4. Mince garlic and add it

  5. shred ginger and add it

  6. Add stock & tomato paste, cover and change setting to stew. Cook for 20 minutes.

  7. turn crockpot off, open it and add vegetables and spices

  8. cover and cook for another 15 minutes

  9. If it was too watery open lid and let it simmer until thickened
