Veggie Lentil Soup

Check out this delicious high fiber soup recipe. 

Ingredients 

1 cup zucchini

1 cup  tomato

1 cup carrots

1 cup orange lentils 

1/2  a cup onion

3 garlic cloves

1 tablespoon butter

1 tablespoon olive oil

1 teaspoon of paprika 

1 teaspoon of turmeric

1 teaspoon of cumin

1 teaspoon of coriander powder 

One teaspoon of white pepper

Salt to taste

Steps

  1. Wash and chop all ingredients into 1 inch cubes

  2. Wash and drain lentils set aside

  3. In a pot heat olive oil and butter

  4. Add onions first sauté for a minute then add other ingredients and sauté for three minutes

  5. Add lentils Sauté for a minute then add 32 ounces of water, add all spices 

  6. Cover and cook on medium heat for about five minutes

  7. Transfer to a blender and blend until desired consistency
