Couscous Grape Chicken Salad

Bringing this ancient grain with a variety of flavors all in one dish.

Ingredients

1 cup couscous   

1 cup grape tomatoes 

1 cup cucumbers 

1 cup sweet peppers 

1/2 cup red onion 

1/2 cup red grapes cut into haves 

3 oz grilled chicken 

Dressing: 

1 lime

1 tbsp olive oil 

1 tsp balsamic reduction 

Salt & pepper to taste 

Steps

  1. cook couscous according to the package, set aside to cool

  2. wash and chop all ingredients

  3. Add all ingredients into a bowl and drizzle with dressing
