Mushroom Kale Bowl
Nothing is better than a warm bowl of whole grain pasta mixed with low starchy vegetables. This recipe is an explosion of fiber, providing 12 grams of fiber in one bowl! Top it off with your favorite chicken, meat, or tofu for added protein!
Ingredients:
8.00 oz. Mushrooms - Baby Bella
1.50 cup chopped Kale
2 stalks Green Onions / Scallions (white and green parts separated)
3 oz. Feta cheese
1 tbsp, Olive Oil
1 tsp red pepper flakes
2 garlic cloves, slightly mashed
Salt and Pepper to taste
4 oz dry, Whole Grain Pasta (2 oz Dry = 1 Cup Cooked)
Steps:
cook pasta according to the package
heat olive oil in a pan (I used my nonstick 360cookware sauté pan)
add light green onion stalks and garlic, sauté for a minute
add mushrooms, sauté till wilted, add kale and sauté for a minute, season with salt and pepper
add in cooked pasta and feta cheese
garnish with green onion
