Whole Grain Pasta Bowl

 Did you know that fiber slows your blood sugar level from spiking? Consuming whole grain wheat products is one way to increase fiber intake in your diet. Try to make at least half of your grains like your pasta and bread to be whole grains. Not only it would increase your fiber intake, but your proteins as well!
Here is a recipe to help you incorporate whole grains to some of your classic pasta dishes.

Ingredients 

1/2 pound ground beef 

1 cup diced carrots 

1 cup diced zucchini 

1 cup tomatoes 

1/2 cup onions 

2 tbsp olive oil 

4 garlic cloves 

2 tbsp tomato paste 

6 oz. whole grain pasta 

Spices: 

1 tsp paprika

1 tsp coriander

1/2 tsp turmeric

pepper and salt to taste 

Steps 

  1. Cook pasta according to the box 

  2. Heat 1 tbsp olive oil in a skillet, sauté onion for 2 minutes, add meat and minced garlic, and cook for 3 minutes, add spices and cook for 4 minutes 

  3. Add tomatoes, tomato paste, add 1 cup water and simmer on medium till thickens 

  4. Add drained pasta to the mixture and gently mix 

  5. In a skillet heat 1 tbsp on olive oil, sauté carrots and zucchini’s till soften (you do NOT want your veggies soggy or change color)

21 g carbs 

15 g proteins   

14 g fat
