Maftoul Mediterranean Salad

Maftoul is a grain made from combining flour, semolina, and water. It is similar to what is called pearl Couscous. One serving of cooked Maftoul is an excellent source of Iron and Calcium; and yields a good source of proteins.

Ingredients

1 cup Ziyad Brand Maftoul

15.5 oz. can Ziyad Brand Chick Peas

2 tsp olive oil

1/4 cup chopped red onion

3/4 cup chopped cucumbers

3/4 cup chopped green bell pepper

1 small chopped tomato

1/2 cup chopped cilantro

1/4 cup sliced pitted Kalamata Olives

For the dressing

1 lime juice

1/2 tbsp Ziyad Brand Pomegranate Molases

1/2 tbsp olive oil

salt & pepper to taste

Steps

  1. Cook Maftoul according to box directions

  2. Wash & Chop all Fresh ingredients

  3. Rinse & drain chickpeas can

  4. Combine all ingredients into a bowl, drizzle with dressing, MIX!
