Avocado Date Fudge

This recipe is an Untimate guilt free dessert for someone looking for that healthier evening snack! It has Less than 1 gram of saturated fats, and ZERO added sugars! Yet still gives a delicious fudgy mouthfeel.

ingreidets:

1 avocado

2 tbsp+ 2 tsp Truvia zero calorie sweetener

2 eggs

1 tsp vanilla extract

1 1/2 tbsp Baking powder

1 1/4 cup flour

125 g of baking dates softened in 3/4 cup warm water

Steps

  1. preheat oven to 350°

  2. line a baking pan with parchment paper

  3. beat avocado and sugar until well combined then add one egg at a time beating continuously

  4. alternate the flour and the dates mixture starting and ending with flour

  5. bake in the oven for about 30 minutes or until toothpick is inserted and comes out clean (some cramps are OK)!
