Tamarind Tilapia Casserole

This classic family recipe will definitely be your show stopper for the day! It’s rich in healthy fats and proteins as well as low in carbohydrates.


ingredients:

6 tilapia fillets  

½ lime 

1 tbsp olive oil 

1 yellow onion chopped finely 

2 tomato chopped finely 

1 cup sliced bell pepper (any color works)

1 cup sliced carrots 

2 tbsp tahini sauce 

¼ cup tamarind concentrate 

1 tbsp tomato paste 

For garnish:

¼ cup pomegranate seeds

1 scallion 

Spices:

1 tsp cumin

1 tsp paprika 

1 tsp coriander powder 

½ tsp black pepper 

1 tsp salt

steps:

 1. Preheat oven to 350 degrees F 

2. In a saucepan heat olive oil, and sauté onion till trans loosened

3. Add spices mix for a minute, then add tomatoes, mix again till well combined 

4. Add tamarind concentrate and ¾ cup of water, let it simmer on medium heat for 2 minutes, add lime juice, mix and remove from heat 

5. Add tahini and mix, let it simmer on low till it thickens 

6. In an oven safe baking pan, Place fish fillets then add sliced carrots, and peppers 

7. Pour sauce over, bake for 30 minutes or until sauce thickens 

8. Garnish with green scallions and pomegranate seeds
