Crockpot Bean Bowl

Nothing is better than a warm bean bowl pretty much all year long! Beans are a great source of low fat proteins, low in carbohydrates and high in fiber!
In this recipe I used a crockpot to make simple homemade beans without all the added preservatives and salt!
Cook them in batches, store, freeze or even use them for multiple meals during the week.

To make this meal you need:

1 1/4 cup long grain brown rice( washed and drained)

4 cups broccoli florets ( I used the steam in a bag kind)

1 cup dried pinto beans (soaked overnight)

1 tomato finely diced

2 garlic cloves (minced)

1/2 onion

1 tbsp tomato paste

1 1/2 cup low sodium vegetable broth

Spices: 1 tsp coriander powder, 1 tsp paprika, 1/2 tsp pepper, 1 tsp cumin, salt to taste

Steps

  1. Cook rice according to package

  2. steam broccoli florettes according to the bag directions

  3. Drain the soaked beans water, wash and drain again

  4. place in a crockpot with water enough to cover them 1 inch above. Set crock pot on the “beans” setting let it cook

  5. When done drain and rinse, set aside

  6. in the crockpot turned onto the simmer setting and 1 tablespoon of olive oil then add onion and sauté till softened, add tomatoes and spices, stir for a minute

  7. add tomato paste, cooked Beans, and low sodium vegetable broth let it simmer on high medium heat until liquid thickens

  8. Pour on top of rice, enjoy!
