Lentil Bulgur Soup

This soup recipe is similar to a famous Turkish soup. The difference is that this recipe is lower in fats and carbohydrates content than it’s original recipe. This soup is both high in fiber and proteins and low in fat! Only one serving is an excellent source of your daily needs of iron!

Ingredients

1 cup orange lentils

1/2 cup bulgur

1 small onion

2 minced garlic cloves

1 tbsp tomato paste

1 tbsp flour

2 tsp vegetable oil

1 tsp butter

spices: 1 tsp dry mint, 1/2 tsp pepper, 1/2 tsp paprika, 1/2 tsp cumin, 1 tsp salt

Steps

  1. heat 1 tsp of oil and 1 tsp of butter in a pot, add onions. Sauté on medium heat till softened

  2. add 4 cups of water to the pot, let it boil

  3. wash & drain lentils a few times until water runs clear, add to pot

  4. wash & drain bulgur then add to pot

  5. Cover and let it cook on medium low heat for about 7 minutes

  6. in a separate skillet, add 1 tsp oil, tomato paste, flour & spices, mix on low heat till well combined

  7. mix the sauce into the soup and gently whisk to get it well combined

  8. sprinkle some dry mint and paprika before serving
