Chicken Tikka Masala
Chicken Tikka Masala is made from an onion and tomato creamy paste base. This dish is flavorful, high in antioxidants, and lean proteins.
Ingredients:
2 skinless boneless chicken breasts
2 medium size tomatoes
1 medium size onion
Fresh coriander leaves
fenugreek leaves (Kasoori Methi)
1 - 2 tsp Sugar or as needed
1 tbsp ghee or butter + 1 tbsp vegetable oil
8 oz Tomato sauce
1/4 cup Cooking cream
splash of water if needed
Marinade spices:
1/2 tsp Turmeric powder
1 tsp fenugreek powder
1 tbs Ginger garlic paste
1 tsp Garam masala + 1/2 tsp
1/2 tsp Chili powder (omit if prefer mild)
1 tsp coriander powder
1/2 tsp Salt
Steps:
Cut the chicken into 2 inch cubes and marinate it for half an hour by adding marinade spices
Chop tomatoes and onions onto medium sized cubes
In a heavy bottom pot heat 1 tbsp of ghee and 3/4 tbsp oil on medium heat
Fry the onions till they are golden then add the tomatoes and fry till the tomatoes melt and it all becomes mushy
Add 2 teaspoons of sugar and 1 can of tomato sauce, mix and Turn off heat
Transfer to a blender and mix until you get a nice orange smooth paste
Add 1 tsp oil in the same pot and Sauté the chicken on medium high heat till almost fully cooked
Add the mushy orange mixture along with cooking cream, and some more butter, sugar, Salt, 1/2 tsp garam masala (if needed)
Simmer on medium flame till thickened for about 5 minutes
Add fenugreek leaves and chopped coriander leaves for garnish
serve with rice or naan
