Chickpea Curry Bowl

 Love curry? Go ahead and indulge in this high fiber and flavorful dish


Ingredients

1 cup quinoa

1 can of chickpeas 

1/2 cup onion 

1 cups chopped carrots 

1 cup red peppers 

1 tbsp golden raisins 

2 garlic cloves 

1 tsp ginger paste 

1 tsp tomato paste 

1 tsp turmeric  power 

1 tsp curry powder 

1/4 tsp chili powder 

1 tbsp olive oil 

Salt and pepper to taste 

Steps

  1. Cook quinoa according to directions on the box. 

  2. Wash and chop all ingredients 

  3. Heat oil in a pan, add onion then sauté for a minute then add carrots, pepper, garlic & ginger then sauté for about 3 minutes on medium heat 

  4. add chickpeas and all spices and sauté for 1 minute ( do not burn the spices)! 

  5. Add 1/4 cup of water, tomato paste, and raisins. Let it simmer on low until water is absorbent.
