Easy Chicken Tacos

Looking for a combination of higher protein, low carb dinner that is loaded with healthy fats? Here is an easy recipe that you will like. 

Ingredients

6 Corn tacos

For chicken: 

1 lbs skinless boneless chicken breast 

1/2 packet Chicken taco seasoning 

1/2 lime 

0 calories Cooking spray 

For guacamole: 

2 avocados 

1/2 cup tomato

1/4 cup red onion 

1 small jalapeño (optional) 

2 tsp olive  oil 

1 lime 

Salt & pepper to taste 

For garnish: 

2 cups Romane lettuce 

1/4 cup Mexican cheese 

Some cilantro  

Steps

  1. Trim the chicken into small cubes, Marinate chicken in spices & lime juice, keep in the fridge for two hours or overnight 

  2. Cook chicken on high heat on a griddle Sprayed with cooking spray

  3. For guacamole wash and chop ingredients finely 

  4. Smash two avocados and add ingredients to along with olive oil, lemon juice, salt and pepper

  5. layer tacos starting with chicken, guacamole, cheese, lettuce and cilantro for garnish
