Roasted Pepper Hummus

Easy light hummus. High in protein and fiber

Ingredients

  • 2 cans garbanzo beans (chickpeas) washed and drained 

  • 2 garlic cloves 

  • 2 small peppers/ or half a large red or orange pepper 

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon salt

  • Half a teaspoon pepper 

steps

  1. roast pepper in the oven till forms a crust

  2. peel dark parts then wash with cold water

  3. wash and drain chickpea then add in a food processor with other ingredients

  4. mix till smooth, add a splash of water if needed
