Dates Pistachio Salad

Craving something sweet in your salad? Why not add some delicious and nutritious dates!
Only 2 Dates are a good source of copper and fiber, as well as other minerals and vitamins. Pistachios add a whole lot of healthy fats and are a good source of vitamin B-6.

ingredients

1 cup lettuce

1 cup spinach

3 dates

1 tbsp pistachios

1 oz goat cheese

5 raspberries

for the dressing:

1/2 tbsp olive oil

1/2 lime

1 tsp pomegranate molasses

salt & pepper to taste

steps

  1. Chop dates into halves

  2. Cut goat cheese into small cubes

  3. Drizzle dressing over salad and Toss all ingredients together

  4. serve
