Farro Lentil Bowl

Ingredients

1/2 cup of farro 

1/2 cup of baked sweet potatoes

1 tablespoon of baked onion 

1/3 a cup of black lentils 

One cup of arugula 

For dressing: 1 tablespoon of olive oil and lemon juice  

Steps

  1. cook farro and lentils according to package

  2. bake sweet potatoes and onions in the oven for 20 minutes on 350 degrees

  3. layer ingredients in a bow starting with farro, lentils, potatoes, onions and toss with a handful or greens
