Red Pepper Lentil Soup

Making soup is easy as 1, 2, 3!
Soup is one of the easiest ways to get many nutrients in one dish! One bowl of this soup is an excellent source of vitamin A, C & Iron. This recipe is a high in fiber and low in carbohydrates!

Ingredients

1 cup chopped red pepper

1 cup orange lentils (washed and drained)

1/2 cup chopped onions

2 chopped garlic cloves

1 Tbsp red pepper paste

2 cups water, 2 cups low sodium vegetable broth

1 tbsp butter

1 tsp paprika, 1 tsp salt, 1/2 tsp turmeric, 1/2 tsp pepper

Steps

  1. Heat butter in a pot, place all chopped ingredients, sauté for 3 minutes

  2. add lentils and spices, sauté for a minute, then add water & broth

  3. cover and let is simmer for 5 minutes on medium heat. Transfer to a blender and blend till desired consistency
