Brussels Potato Salad
This sweet potato salad is a good alternative for the traditional white potato and mayo salad. One cup of sweet potatoes are an excellent source of Vitamin A and a good amount of vitamin B-6, and fiber!
Brussels sprouts add a whole more nutritious value to this recipe!
ingredients:
2 cups sweet potatoes
2 cups Brussels sprouts
1 cup onion
2 tbsp olive oil
1 lime juice
1 tbsp dijon mustard
Salt & pepper to taste
steps:
preheat oven to 350 degrees F
wash and cut potatoes into cubes, Brussels into half’s, and onion into sliceslayer on a baking sheet
drizzle with 1 tbsp olive oil, add salt & pepper to taste
bake in the oven for 20 minutes
in a small bow whisk lime juice, 1 tbsp olive oil, and dijon mustard untill well combined
drizzle over salad and enjoy warm
