Brussels Potato Salad

This sweet potato salad is a good alternative for the traditional white potato and mayo salad. One cup of sweet potatoes are an excellent source of Vitamin A and a good amount of vitamin B-6, and fiber!
Brussels sprouts add a whole more nutritious value to this recipe!

ingredients:

2 cups sweet potatoes

2 cups Brussels sprouts

1 cup onion

2 tbsp olive oil

1 lime juice

1 tbsp dijon mustard

Salt & pepper to taste

steps:

  1. preheat oven to 350 degrees F
    wash and cut potatoes into cubes, Brussels into half’s, and onion into slices

  2. layer on a baking sheet

  3. drizzle with 1 tbsp olive oil, add salt & pepper to taste

  4. bake in the oven for 20 minutes

  5. in a small bow whisk lime juice, 1 tbsp olive oil, and dijon mustard untill well combined

  6. drizzle over salad and enjoy warm
