Mediterranean Quinoa Bowl

Quinoa is one of the few grains that contains all essential amino acids, which serve as building blocks for proteins in your body. The only way for your body to get essential amino acids is through your diet.
One way to add more quinoa into your diet is by using it as a base to your bowls.
Here is an easy and nutritious recipe:

Ingredients

3/4 cup quinoa

2 tbsp kalamata olives

1 cup spinach, chopped

2 oz feta cheese

6 oz. cooked grilled chicken kabob

Dressing:

2 tsp olive oil

1 tsp pomegranate molasses

1/2 tsp sumac

1 lime juice

salt & pepper to taste

steps:

  1. cook quinoa according to the box

  2. Use Grilled Kabab Mango recipe to prepare chicken

  3. Assemble in a bowl starting with quinoa, then chopped spinach, chicken, olives and feta cheese

  4. drizzle with dressing
