Spaghetti Squash Boats

Spaghetti squash is a famous winter vegetable. It’s loaded with nutrients and fiber and low in carbohydrates! Making it a perfect base for many warm or even cold toppings! I like to pair with a home made low fat meat Bolognese sauce, yum!

ingredients:

1 spaghetti squash cut into half and cored

1 Tbsp olive oil

1 Tbsp vegetable oil

1/4 cup coriander leaves

for the Bolognese sauce:

1/2 lb 90% lean ground beef

1/4 cup Parmesan cheese

1 tomato diced

2 garlic cloves

1/2 cup chopped onion

2 Tbsp tomato paste

1/2 cup water (more if needed to make it saucy)

Spices:

1 tsp paprika, 1 tsp coriander, 1/2 tsp pepper, 1/2 tsp turmeric powder, 1/4 tsp cinnamon powder, 1/4 tsp cardamom powder, 3/4 tsp salt

Steps:

  1. Preheat oven for 350 degrees F

  2. Wash and cut squash into half

  3. Take seeds out and drizzle with olive oil, salt and pepper

  4. bake for 40-45 minutes

  5. froth with fork to break the flesh when done
    Meanwhile , let’s cook Bolognese sauce:

  6. heat oil in a pan and sauté onions till soft

  7. add meat, and minced garlic and sauté on medium high heat till half cooked

  8. Add spices, tomato paste, tomato and water, mix to incorporate ingredients

  9. cook till sauce thickens

  10. poor into squash boats and sprinkle with cheese and coriander leaves if desired
