Mediterranean Stuffed Pepper

Ingredients

3/4 cup short grain rice 

0.5 pound lean ground beef

One lime 

Four large red peppers

One large potato

1/2 cup chopped cilantro

1/2 cup chopped parsley

3/4 of a cup chopped yellow onion 

1 can tomato sauce

4 garlic cloves minced

1 cup low sodium vegetable stock

1 cup water

1 tablespoon vegetable oil

2 tablespoons olive oil

1 tablespoon tomato paste

Spices: 

1 teaspoon coriander powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon turmeric powder

1/4 teaspoon cinnamon 

1/4 teaspoon cardamom powder

1/4 teaspoon ground pepper

Steps

  1. Add 1 tablespoon of vegetable oil and Sauté onion till  translucent

  2. Add ground beef and garlic sauté for a minute then add spices and sauté till halfway cooked

  3. Add parsley and cilantro, mix until well combined then turn off heat and set aside

  4. In a bowl add washed and drained rice, half a lime juice, ground beef mixture, olive oil, tomato paste, 1/4 teaspoon salt 

  5. Stuff peppers with the mixture till 3/4 filled

  6. Peel and slice potatoes in round slice shapes 

  7. In a heavy bottom pan place potato slices and pour half of the tomato can on top then arrange stuffed peppers on top 

  8. Pour the remaining tomato sauce on the peppers add the water and vegetable stock, half a lime juice and 1 tablespoon of olive oil

  9. Cover and cook on medium low heat until rice is cooked and peppers are cooked and soft (not too soft) 

*if all is cooked but there is still some runny water, take off the lid and simmer on medium high till sauce thickens
