Veggie Beef Rice

There is nothing better than a delicious warm bowl that contains all the nutrients you need! The carbohydrates in this dish come from the rice and vegetables. We are also using lower fat ground beef as our proteins source. The nuts add crunch and healthy fats to this meal. Not forgetting the fiber content that come from the vegetables. Increase your fiber intake by using brown rice for this recipe. You can also use frozen vegetables, which have the same nutrient content as their fresh versions.

Ingredients

1 cup basmati rice

1/2 pound lean ground beef

1 small onion

3 garlic cloves

2 cups mixed vegetables

1 tbsp vegetable oil

2 cups low sodium vegetable stock

1/4 cup raw almond halves

4 cilantro branches

Spices: 1 tsp salt, 1 tsp paprika, 1/2 tsp black pepper, 1/2 tsp turmeric powder

Steps

  1. chop onion finely

  2. wash and drain rice multiple times until water runs clear

  3. in a pot, add 1 tbsp oil, add almond halves and saute till light golden. Remove almonds from the pot and set aside (will be used for garnish)

  4. In the same pot, add onions and saute till soft

  5. add ground beef, garlic and spices, mix until well combined

  6. add stock and vegetables, let it boil, then add rice, let it boil then reduce heat to medium low

  7. let it simmer covered until rice is cooked, turn heat off when all water has evaporated

  8. fluff gently with a fork

  9. garnish with fresh chopped cilantro and nuts if desired
